Drain extra firm tofu and pat dry. One-half cup is equal to 3 oz. of meat. Cut the tofu into cubes and use to extend the meat in chicken or beef stirfry or, if you don't eat meat, just use the tofu in the vegetable stirfry. Soft tofu makes a great strawberry smoothie. Add 4 ice cubes, one cup of strawberries, 1/2 cup soft tofu, and a little vanilla soy milk. Blend and enjoy!
